Local Eats: The Bread Guy from Saginaw serves Neapolitan-style pizza every Saturday

SAGINAW, MI – Most of the time, The Bread Guy offers freshly baked baguettes, balls, croissants and other French and European inspired breads and pastries in the old town of Saginaw.

But on Saturdays, sourdough and cinnamon buns aren’t the only things that “Bread Guy” Mitch Delemeester bakes in the oven. It also offers made-to-order pizzas that you won’t find anywhere.

“The customers really liked it. They are delighted to see the thin crust pizza, ”said the owner of the small artisan bakery, located at 411 Hancock St. “You can’t get this pizza, exactly, anywhere else in here.”

Like most things at The Bread Guy, it starts with the dough.

“We make the pizzas on Saturday, but we make the dough on Thursday,” Delemeester said. After fermentation in the refrigerator for 48 hours, “we take this dough the same day and stretch it into a thin crust or like a Neapolitan pizza.”

Then he adds some homemade sauce, fresh mozzarella and other toppings and bakes the pizzas on thick stones at 500 degrees before sending them out the door.

The Margherita pizza, topped with fresh mozzarella, tomatoes and fresh basil, is still on the menu and priced at $ 15. Other specialty flavors in the rotation include Prosciutto with Kalamata Olives and Artichoke Hearts, $ 16, and Spicy Salami with Tomato, Onion, and Basil, $ 16. The pizzas are 14 inches in size and feed two to three people.

“Certainly the Margherita is the most popular. It’s simple, it’s good, it’s just kind of a classic, ”said Delemeester.

The Bread Guy also offers seasonal pizzas, and he’s not afraid to experiment with toppings that may not be familiar to some customers.

“During the summer when we have the farmers market, we just go out and pick up the best veg we can, whatever fun combination we can think of, and try it,” Delemeester said. “We made a duck egg on the pizza once, but I think people were a little cautious about it.

Customers are encouraged to call at least an hour in advance, or even the day before, to place their pizza orders.

The Bread Guy is open Wednesday through Saturday and pizzas are available from 11 a.m. to 1:30 p.m. Saturdays only.
